Possibly my most exciting Pancake Day yet! I joined Candice Brown, winner of GBBO 2016, for a masterclass at London’s Food 52 Cookery School.

Candice had prepared an exclusive recipe in collaboration with Sainsbury’s that I’ll be sharing with you here.

Being a huge fan of savoury food, Candice decided to teach us an alternative recipe to the traditional lemon & sugar or Nutella options. I was a little skeptical at first – who in their right mind says no to Nutella? But I have to say, Candice’s Croque Monsieur pancake is a definite must. Just save the sweet pancakes for dessert and you get the best of both worlds!

 

The Tools: Sainsbury’s Cookshop Collection

To help us make our pancakes we used Sainsbury’s latest collection of cookware, including their brand new cast iron pan made especially for pancakes! The pan is designed to heat evenly across the whole surface which is an important feature when it comes to cooking the perfect pancake. Just ensure that your pan is well-greased to avoid any sticking.

I also loved the cute Ville de Provence embossed set of measuring cups, jug and mixing bowl that we used alongside the red silicone whisk. Little did I know when I got dressed that morning that I’d be matching my whisk and pan so well!

 

The Recipe: Croque Monsieur Pancake

Ingredients

For the batter:

120g flour

2 eggs

300ml whole milk

2 tbsp butter

Bunch of parsley

Pinch of salt & pepper

 

For the filling:

200g chestnut mushrooms, chopped

200g shredded ham hock

1tsp garlic

1tbsp chopped parsley

Pinch of salt & pepper

 

For the béchamel sauce:

40g unsalted butter

1tbsp plain flour

2tsp mustard

100ml whole milk

100g gruyère cheese

Pinch of salt & pepper

Chives to serve

Directions

1. Sieve flour into a mixing bowl and make a well in the middle.

2. Crack two eggs into the well and beat them with a fork.

3. Add milk, parsley, salt and pepper and whisk until a smooth mixture is formed.

4. For the filling, heat some olive oil and butter in a pan and fry the chopped mushrooms with garlic. Cook until soft and golden.

5. Add the chopped parsley and ham hock and fry for another minute or so. Season with salt and pepper to taste.

6. To make the sauce, melt some butter in a small saucepan over low heat then add in the flour, stirring constantly for 3 mins.

7. Add in the milk a little at a time and keep stirring until the mixture becomes smooth and thick.

8. Stir in the mustard and add salt and pepper to taste.

9. To make the pancakes, first melt some butter and oil in a large flat pan over medium-high heat.

10. Pour in the batter, enough to cover the base of the pan evenly. Fry until bubbles start to lift the pancake before flipping over to cook the other side.

11. Whilst it cooks, spoon your mushroom mix down the centre your pancake, followed by béchamel sauce and chives. You can grate some extra gruyère cheese on top if you wish.

12. Using your spatula, carefully fold the sides of the pancake in to wrap the mixture inside.

13. Sprinkle with more chives and serve!
